I love anything salted. Something about salt added to desserts, especially chocolate just makes everything taste so much more decadent.
So, I had a random thought. Miso salted hot chocolate. Crazy but it’s kinda like soy sauce caramel, it just works. In fact, I’ve been adding miso paste to my hot chocolate for the past 2 weeks now and I’m OBSESSED.
Oh, and you know what else I’m loving right now? Oat milk. I get the hype now, friends. It is the perfect milk for hot chocolate, truly.
Ingredients for oat milk hot chocolate
This healthy salted hot chocolate is made with just 4 basic ingredients:
- Oat milk: for the creamiest hot chocolate. You can also use any milk of your choice.
- Maple Syrup: naturally sweetened! Substitute for your favourite sweetener.
- Cocoa powder: preferably high quality dutch processed.
- Miso paste: I used white miso paste since it’s more mild than red.
- Chocolate: optional, but makes it extra rich and delicious.
How to make creamy oat milk hot chocolate (easiest way)
This recipe is so easy and quick that it’s kinda dangerous. Simply add all the ingredients, except the miso paste to a small sauce pan and heat it up. Once heated, dissolve the miso paste and whisk until combined. Using a whisk is key here to remove any clumps in the cocoa powder and miso paste and to ensure the bottom doesn’t burn. If you do have a miso paste muddler, it’s really handy to quickly get rid of the clumps.
Pour into your favourite mug, top with coconut whip cream or marshmallows… or even ice cream and enjoy!

Miso Salted Hot Chocolate

Description
Ultra creamy oat milk hot chocolate spiked with miso paste! Lightly sweetened with pure maple syrup, this dairy free hot chocolate is the perfect cozy drink to keep you warm.
Ingredients
Hot chocolate
- 1 cup oat milk (240ml)
- 1 tbsp maple syrup (20g)
- 1 tbsp cocoa powder (8g)
- 1 heaping tsp miso paste (7g)
- 1 tbsp dark chocolate, optional (15g)
To serve
- vegan marshmallows
- coconut whip cream
- dairy-free ice cream
Instructions
- Add all the ingredients except miso paste into a small saucepan over medium heat. Stir with a whisk vigour-sly to remove any clumps.
- Once it starts to bubble, reduce heat to low and then add miso paste (use a miso muddler if you have one). Keep whisking until smooth and miso paste is dissolved. Pour into a mug and serve.

Happened to glance by this while looking for recipe I planned to make for lunch this week, and I knew I had to try it. Since I already had all of the ingredients, I was able to whip it up in a few minutes. I was a little skeptical of the miso at first–I accidentally added wayyyy too much miso when making a different recipe recently and now even the smell of miso makes me shudder. I triple-checked the recipe this time. I ended up loving it, couldn’t even taste it the miso. I think I’ve found my new go-to hot chocolate recipe. Genius!
This is just AMAZING. My life has changed! Miso is such a versatile ingredient and sneaking into hot chocolate is the move I never knew I needed. I love a good salty sweet combo and like my hot chocolate thick and creamy, so this did more than hit the spot! I used nut milk and coconut sugar instead of oat milk and maple syrup, but in around the same proportions!

I love miso and I love hot chocolate, but I definitely would have never thought to put them together. I’m so glad that I did because it was a really wonderful salty-sweet-creamy treat to enjoy after my meal! Make sure you’re using a mild miso like she recommends, otherwise I would do maybe 1/2 tsp if you don’t have one that’s mild in flavor. Will definitely be enjoying this alllll winter long!

I’m never making hot chocolate without miso again! This is SO good!!! I was out of plant milk, so I just used water plus a small handful of cashews. I put all of the ingredients in the pot, brought to a boil, then took it off the burner and let it sit for a few minutes to allow the cashews to soften. After that I threw it into the Vitamix and blended to creamy perfection. So easy. Thanks again for another awesome recipe, Lisa! You rule!
